Make Your Own Potato Chips!

Ok, so you want to make your own bag of potato chips? No problem, we'll show you just what you need and how you can do it. It really is easy to do and it all depends on whether you want to have a little for yourself or family to try or actually start your own business. We'll put it like this, you want to cook a small batch in your kitchen or a large batch in a really big kitchen? We'll start with your kitchen first. There a couple of ways to create chips to sample at home. There's the microwave method and then there's the stove top or pot method. The Microwave Method --Equipment needed: 1) Microwave:: 2) Potato slicer/peeler (mandolin slicer pictured):: 3)Microwavable plate:: 4)Plastic bag --Ingredients: 1) Potatoes (1-2 potatoes per serving):: 2) Oil (vegetable or other) (1 tablespoon per potato):: 3) Salt:: 4) Seasoning/Flavoring (optional, and of your choosing)
--Process: Simply use the peeler or slicer to cut the potatoes into paper thin slices. Pour oil into plastic bag. Put potato slices into bag and shake to coat all slices with the oil. Coat the microwave plate/dish with oil or cooking spray then arrange slices in single layer on plate/dish. Because microwaves vary, cook in microwave for 3-5 minutes until they turn light brown. They will not be crispy if not lightly browned. Remove, salt to taste, and allow to cool. Repeat process for remaining slices. Of course you can choose to season (click here for seasoning or flavoring recipes) your chips with whatever you wish to try. That's it, you're set to make your own potato chips right in the microwave.

The Pot or Stove Top Method Equipment: 1) cast iron dutch oven (2-4 quart size depending on how much you want to make 2) mandolin potato slicer (many different kinds to choose from like the one above, see equipment section for more) 3)Thermometer  Ingredients: 1) potatoes, sliced 2) oil (vegetable, canola, rice, etc.) 3 salt or truffle salt 4) seasoning (optional) Procedure: 1) Heat oil in pot/oven, use thermometer in oil and make sure it gets to 300 degrees, then 2) potatoes should be sliced to about 2mm, apply single layer of potato to pot 3) blanch the slices until matte/plain color rather than original shiny, then remove and soak on paper towels 4) increase oil temperature to 350-375 degrees and put slices back into pot in a single layer 5) this time, cook until they turn golden or crisp if using blue or purple potato slices 6) remove from oil, soak on paper towels to absorb excess oil, salt, and season! All set to make your own!

Bigger Batch methods:
If want to stay small and operate out of a kitchen, then just use the above method but with larger pots and several of them. This will take time and is better for small batches, such as for specialty and/or small gathering sales. The issue is keeping the potato slices at a single layer when cooking.
For a larger potato chip business, a continuous fryer is common, and they range in sizes, so please consult and research depending on the size of your business.
This is only an idea for larger type startup businesses. The costs will be where it is more ideal for you to consult with others in the industry and/or learn about the industry via conventions and trade shows.
